How to bake lavash?

Lavash - one of the oldest types of bread, a product of fresh yeast dough in the form of a thin cake .

Armenian lavash

Lavash is baked in traditional ovens (tandyr), the main components of the dough are wheat flour (less often a special grade of barley or their mixture), leaven and water. The ready dough is rolled very thinly with a rolling pin, flat cakes (more precisely sheets) are baked on the internal hot tandyr walls. Literally after 30-50 seconds, the prepared lavash is extracted, one pile is stacked on the other. Often used for wrapping other foods and ready meals.

Other methods and options

In Azerbaijan and some other regions, lavash is traditionally baked on a large ceramic circle (sage), which is installed on a stand under which a fire is planted.

Georgian lavash is more magnificent, that is, cakes are much thicker.

To bake pita bread or flat cakes at home in the oven it would be good to buy a special "stone" for pizza (sold as an accompanying product to modern gas and electric cookers). Or you can bake home pita bread in a large skillet.

Preparation

We knead the dough in a safe way from sifted flour with water and yeast (preferably fresh). Stir intensively, but not for long. Place the dough in heat for about 20 minutes, turn it on, mix it, repeat the cycle 1 more time or 2 times.

When the dough has approached enough, divide it into equal parts and roll out thin round flat cakes the size of "stone".

The oven is already warming up, the "stone" for baking is clean and dry (it should be installed on a regular grid).

Roll out cakes one by one on stone and place in the oven. Baking is controlled visually: as soon as it is browned, gently remove the cake and bake the next, add a stack to a clean board or dish.

How to bake pita bread in a frying pan?

Rolls roll out to the size of the frying pan (it can be dry, but under the first cake it is better to smear a warm bottom with a piece of pork fat, pinned on a fork).

Fresh warm home-made lavash is served to any dish. In the morning it is good to eat with butter and cheese.
