In the matzoni add soda and egg, mix well and salt mixture. We sift the flour and pour it into the liquid ingredients, continuously mixing them. The finished dough should be gentle and smooth, slightly sticking to the hands. Now the basis for khachapuri should be transferred to a clean bowl, oiled, and leave in the warmth for 1-1,5 hours.

Suluguni is rubbed and mixed with soft butter and egg yolk of one egg.

Traditional khachapuri are not prepared with cheese and cottage cheese, but if you do not follow the authentic cuisine in principle, you can make a mixture of low-fat cottage cheese and grated cheese 1: 1.

When the dough is resting and fit, it will need to be divided into 3 equal parts, each of which should be stretched out in the oval. When working with the dough, you should grease the hands and the working surface with vegetable oil. In the center of the oval we lay out our cheese-and-oil filling, turn the edges of the dough and tuck it in the manner of the boat.

Lubricate the pan for baking with butter, lay khachapuri and put them in the oven. Preparation of khachapuri with brynza in the oven will take 15-20 minutes at 210 degrees. One minute before the end of cooking, we drive a single egg into the "boat" of khachapuri, the protein of which must be curled, and the yolk to stay liquid.

Finished khachapuri with cheese is oiled and served to the table.
