The original summer sandwich can be a fresh tomato bruschetta - an Italian snack on toast, which is classified as an antipasto, that is, those that increase appetite. What is not a good reason to deal with the future crop of tomatoes?
Bruschetta with tomatoes and basil
Ingredients:
- slices of white bread - 6 pcs .;
- large ripe tomatoes - 320 g;
- garlic cloves - 1 piece;
- leaves of basil - 4 pcs .;
- olive oil - 30 ml.
Preparation
Cut the large ripe tomatoes into small cubes and mix them with the garlic and basil leaves passed through the press. In the tomato mixture add the garlic chopped in the paste with sea salt. Leave all the ingredients for 10 minutes to exchange flavors.
Lubricate the bread slices with butter and brown them on a grill or frying pan. When the slices are golden, slice them with a garlic clove and cover with tomato salsa on top. Before serving, sprinkle the bruschetta with the tomatoes with an extra serving of butter.
Bruschetta with tomatoes and mozzarella
Ingredients:
- slices of white bread - 4 pcs .;
- mozzarella - 120 g;
- Cherry tomatoes - 240 g;
- basil leaves;
- a slice of lemon;
- olive oil - 35 ml.
Preparation

- ricotta - 75 g;
- handful of dried tomatoes;
- For pesto sauce:
- handful of basil leaves;
- garlic chives;
- pine nuts - 1 tbsp. a spoon;
- olive oil - 20 ml.
Preparation
Prepare the pesto sauce . In the blender, put the basil greens, nuts and a chive of garlic, whisk all the ingredients until the sauce forms.
Rinse the bread and cover it with pesto, put ricotta on top, sprinkle it a little and add slices of dried tomatoes.
How to cook bruschetta with tomatoes and avocado?
Ingredients:
- slices of white bread - 4 pcs .;
- avocados - 1 piece;
- a handful of cherry tomatoes;
- mozzarella - 80 g;
- pesto sauce - 90 ml.
Preparation
Cut the cherry in half and put it on the grill. Once the fruits are softened, remove them from the fire. Slices of toasty white bread cover the avocado, from above we put baked tomatoes and mozzarella. Pour all the pesto sauce.
