Quesadilla with chicken - recipe

Quesadilla is a traditional dish of Mexican cuisine, consisting of 2 flat tortillas (or one rolled in half) with a layer of cheese and possible additions in the form of meat, seeds, or light salad. When cooking, both tortillas are glued together with the help of melted cheese, which envelops the rest of the ingredients of the snack - this, however, is the main difference of quesadilla from similar dishes such as burritos, or enchilada.

Quesadilla is a convenient dish, which is easy to take with you to work or a walk, and cooking this wonderful snack takes just minutes. Let's begin our acquaintance with it from a practically traditional recipe.

Chicken my fillet, cleaned from films and fat, cut into thin strips and seasoned with salt, pepper and a mixture of spices for tacos, which can be found in almost any supermarket next to the tortillas. Then the chicken must be fried until cooked on a pair of tablespoons of olive oil.

On the remaining vegetable oil, fry thin rings of onion and bell pepper until the latter turns dark.

In a separate frying pan we sink about half a tablespoon of butter, spread out the tortilla, pour a bit of grated cheese, vegetables, chicken and, finally, a second portion of cheese. We close the filling with another cake and continue the roasting until the bottom layer blushes. Turning the quesadilla to the other side, do not forget to add another half a tablespoon of butter. In this way, we lighten up all the cakes and serve a snack, slice it portion by piece in the manner of pizza.

In a frying pan without oil, fry the corn. Add it to canned salsa, there we also send a little chopped coriander and lime juice.

Chicken breast is cut into strips and marinated in a mixture of spices from salt, pepper, cumin, chili, and lime juice. Fry the chicken for about 5 minutes, and 30 seconds before the end of cooking squeezed into the pan garlic.

Tortillas are heated in the microwave for about 15 seconds. For each of the cakes we put a little grated cheese, 2 tablespoons of salsa, chicken, another portion of cheese and cover it with cake. Quesadilla with chicken and corn is fried on both sides in olive oil until golden brown.

Before you cook quesadilla, chicken fillet beat off, cut into strips and fry, seasoning with salt and pepper. On olive oil we pass the mushrooms and onions to the full evaporation of liquid from the pan (5-7 minutes). After add the garlic and hold the frying pan on the fire for another 1 minute. Towards laying, we lay the chicken and the remaining spices, at the last minute add the washed young spinach and remove the frying pan from the fire.

In a separate frying pan, warm up a couple of tablespoons of vegetable oil, put one tortillas cake, a little cheese on top, then a vegetable mixture with chicken and spices, and again cheese. Cover the quesadilla with a second tortilla and fry the snack on both sides until golden brown. We cut the finished dish into portions and serve it with salsa and sour cream. Bon Appetit!
