Its flesh is tender, quickly prepared, and when combined with other products and vegetables it acquires new, unique and delicious characteristics each time. And it does not matter which dish to cook, fried, stewed, canned or added to a salad - in any case, the result is impressive and pleases both relatives and friends, and guests at the celebrations.

Appetizer from zucchini "Teshchin tongue"

Washed and dried zucchini is cut into longitudinal thin strips, seasoned with salt and left for fifteen minutes. After the time has elapsed, we dip each strip in flour, then dip it into an egg and brown it for two minutes on each side. We transfer on a paper towel or napkin to absorb excess fat, we grease even hot zucchini with a mixture of mayonnaise and garlic squeezed through the press. Then put a slice of cheese on one edge, into another slice of tomato, sprinkle with chopped herbs and roll up the roll, starting from the end on which the tomato is laid. We place on the dish, decorated with lettuce leaves, edge up and chopping toothpick. We decorate at our discretion.

Appetizer from zucchini "Peacock's tail"

Washed and dried courgettes, cucumbers and tomatoes are cut into slices diagonally to make oblong (oval) circles. Zucchini salted and leave for ten minutes. Then dipped in flour and fry in a frying pan with vegetable oil on both sides until red. We impregnate with a paper towel or napkin extra fat and lay out zucchini fan on the dish decorated with salad leaves and greens. Each slice is greased with a mixture of mayonnaise, and finely chopped garlic. Now put a slice of tomato on top, cover with garlic mayonnaise again, cover with a mug of cucumber, on which we put half an olive. We get as a result a dish resembling a peacock's tail, hence the name of the snack.

Festive appetizer - zucchini rolls with salmon

Ingredients:

Preparation

The washed and dried zucchini is cut along into thin long plates, fry them in a frying pan with olive oil until red, remove excess fat with a napkin or paper towel, season with salt and white pepper. We chop the salmon with thin, long pieces. Then for each slice of fried zucchini we put a piece of fish, sprinkle a little lemon juice, in the center we put a twig of greens, we twist it all with a roll, fasten the toothpick and put it on the dish. We decorate at will.
