According to legend, one day from the pantry in the house of the Persian Sultan, almost all the products for the preparation of traditional sweets were stolen. There were only flour, eggs, sugar and butter. A resourceful cook, who served the Persian Sultan, came up with the idea of ​​how to prepare the kurab from this very limited set of products. The taste of a new delicacy was crowned with saffron - one of the most expensive and exquisite aromatic spices. On top of the cookies was sprinkled with powdered sugar. It is hardly possible to say which form of the first kurab was exactly. Now it is often baked in the form of a flower of a camomile, but also not only. In the subsequent evolution of the recipe, instead of saffron (or together with it) vanilla, cinnamon and cloves were used.

How to cook a kurab?

It is not difficult to cook homemade chicken, although, of course, it is easier to buy it in the confectionery department of the store. And yet, homemade cakes always win.

First we prepare the dough. We melt the oil to a liquid state, preferably in a water bath. The oil should not be too hot. Mix the butter with the powdered sugar and thoroughly rub it until smooth. Then gradually add flour, egg yolks and knead the dough. Stir thoroughly. We wrap the dough in a food film and put it away in the refrigerator, "at least" for an hour. The dough should be cooled and slightly hardened. We roll out a layer of dough, approximately 1.5 cm thick. We cut the layer with a knife into small diamonds or cut figurines with special through molds. Lubricate the tray with oil or forgive oiled parchment paper. We lay out the biscuit pieces on top and place it in a preheated oven.

How to bake a chicken? Bake at a temperature of 190-200 ° C for 15 minutes. Cook the lightly sprinkled sugar powder.

In Crimea, almond chicken is also very popular. The composition of the test for the preparation of almond biscuit, in addition to the main products, includes almond kernels. The layout of products from the above recipe requires about 200-250 grams of ground nucleolus almonds.
