Portuguese cakes are a dessert in the form of a cake with a liquid filling, which can include both the chocolate dough itself and the custard. This is an unusually tasty and original delicacy - a restaurant class dish, which you can easily cook yourself.

It is still not clear why the cakes were nicknamed Portuguese, because the author of the recipe is the Frenchman Michel Brasu. Anyway, the French know a lot about desserts, so we are sure that you will certainly be satisfied with the result.

Chocolate is broken and drowned in a water bath with the addition of butter. Meanwhile, beat the egg-sugar mixture, which includes 2 whole eggs, 3 yolks and sugar to taste, depending on the bitter taste of chocolate.

Chocolate is added to the egg mixture before slightly cooling it, so that the eggs do not curl, and then pour the flour in parallel whipping the dough with a mixer. Now it remains only to bake our muffins in oiled forms at 200 degrees for 7-10 minutes. Be careful and do not bake the dessert, otherwise the result will be ordinary chocolate muffins, although, in principle, this is also not bad.

Portuguese pastry with custard

Similar dessert structure as a liquid filling is filled with a gentle custard, which when baked is covered with a barely audible crust giving a special structure to the cake.

For the custard, mix egg yolks, sugar and corn flour, mix well and put on a water bath. Gradually pour cream and milk into the egg mixture, stirring constantly. Cook the cream until the moment it starts to boil. As soon as this happens, immediately remove it from the bath and pour it into another dish (chilled) to interrupt the cooking process. Cover the cream with a food film and make a puff pastry base, the pieces of which are laid out on oiled cake molds. It remains only to pour the cream into the baskets and send the dessert to bake at 200 degrees 20 minutes.
