Noodles are one of the oldest kinds of pasta, or, as they say in Europe, pasta. In fact, this product is a long thin dried strip of dough. Usually noodles are made from high-grade flour (wheat, rice, buckwheat, barley) or mixtures of flour of various cereals. Some recipes assume the content in the test for noodle eggs.

We need to cook a fairly steep dough, roll it into thin layers and cut the noodles with a knife by hand or using a home-made noodle . On sale it is possible to find also special nozzles for meat grinders. Wheat flour for noodles should be made from hard varieties, then it will turn out well. Rice, barley and buckwheat flour can be obtained at home from the cereals using household grinders or even coffee grinders.

Sifted flour mixed with egg, add salt and curry, as well as water or milk. You can mix the dough with hands or a mixer with spiral nozzles.

If you use a meat grinder with a nozzle, then it's easy: dough into a meat grinder and, not tightly decomposing, to dry noodles on a clean, flour-filled, pallet.

If noodle or hand knife

From the dough we roll thin layers. We cut it with a noodle.

If by hand: we add the layer-cake to 3-4 additions and cut it with a knife.

Dry the noodles at room temperature. If you need to quickly dry it on a baking sheet in the oven with the door ajar, the heat should be minimal.

To be more useful and aesthetically more interesting, you can add fresh juices of bright vegetables or fruits to water or milk used in mixing, for example beet, carrot, pumpkin, tomato, edible juice greens, etc. In this way, we will get colored homemade egg noodles.

Ready noodles cook in boiling water al dente, that is, for 5-15 minutes (or better 7-10), then we throw it back in a colander, washing is not required.

Ready noodles can be served with any kind of sauce (mushroom, vegetable, meat, tomato) and also with grated cheeses or seafood.

Or you can use cooked cooked home egg noodles to make soup, for example: noodles + boiled chicken fillet + chopped greens with grated cheese and pour everything with hot chicken broth .
