Lenten Pumpkin Dishes

The properties and excellent gustatory qualities of pumpkin make it simply irreplaceable for lean menus. From it you can make an excellent soup-puree, pie or cutlets, which we will discuss below in our recipes.

Pumpkin puree soup

Taking supper soup preparations, we prepare first of all the basis of the dish - the pumpkin. If you have a whole fruit, then wash it, cut it in half, remove the middle with seeds, cut off the hard skin, and cut the flesh into random pieces. Cut into pieces the peeled onion, celery stems, garlic cloves, after cleaning them, and grind the carrot on a large grater.

We brown the onion in a vegetable frying pan in a heated frying pan, and after a couple of minutes we put carrots and fry the vegetables together for a few more minutes.

In the pan add the prepared pumpkin, stalks of celery, garlic and lay out the frying. We pour water to the vegetables so that it completely covers them. We put the pan on the fire, let the contents boil over high heat, and then reduce the heat intensity and cook the vegetables until all the pieces are soft.

Now we process the vegetable mixture with a blender until the mashed potatoes are obtained, we season the soup with salt, season with cayenne and black pepper, throw a pinch of ground nutmeg and mix. After about ten minutes, the cream soup is infused and ready for serving.

Lenten pumpkin pie - recipe

To make a lean pie from a pumpkin, we clean the vegetable from the hard skin and the viscera with the seeds, and cut the flesh with small cubes or grate on a large grater. Then mix the pumpkin mass in a bowl with sugar, honey, cognac or rum, ground cinnamon and cloves, and also add zest and lemon juice. Very thoroughly mix everything, add the sifted flour and mix again until the flour lumps dissolve. We shift the obtained base of the cake into a vegetable oiled baking container and place it on the middle shelf of the heated oven. The temperature mode is set to 185 degrees. After about forty minutes we check the preparedness of the pie on a dry wooden skewer, take out the mold with the product from the oven and let it cool completely before serving.

The recipe for chicken and pumpkin patties

Squash and pumpkin pulp crushed with a container of the blender, and the potatoes boiled in a uniform, cleaned and cooled grind over a fine grater. Combine the prepared ingredients in a bowl, add the small-chopped greens of dill, a pinch of ground coriander and black pepper, salt, four tablespoons of wheat flour and mix thoroughly. With moistened hands, we form cutlets, bread them in the remaining flour and put them into the vegetable oil without smell heated in a pan. We brown the products from two sides, and then lay them on a dish and serve them to the table.
