Mochanka

Mochanka is an original meat dish in the Belarusian culinary tradition (sometimes a matchanka is written - probably this writing is authentic and more accurate representation of the Belarusian pronunciation). The consistency is a bit like a goulash.

How to prepare mocha?

Prepare mochanka from various meat products, leftovers (scraps), meat products (various sausages, smoked products) and lard. In the list of main ingredients, wheat flour and water are necessary (in an approximate proportion of 3 tablespoons of flour per 1.5 liters of water). As the remaining ingredients use onions, mushrooms, greens. From spices use black or fragrant pepper. The preparation of mochanka is a simple matter, however, it is necessary to take into account the proportions of the products, that is, there should be enough meat products, but not too much fat, flour and water. A well-prepared mocca is a true masterpiece of Belarusian cuisine.

We brown the flour in a small dry frying pan, and in another pan (more and deeper) fry the mushrooms in oil until golden brown and bring it to readiness under the lid. Add the flour to the mushrooms, stir so that there are no lumps. We'll make a broth and sour cream, carefully mix, add and pepper. We cut the pork ribs into pieces, let it sit for 5-8 minutes, then fry together with finely chopped onion in a separate frying pan in oil and transferred to a pot (you can fry immediately in a thick-walled sauté pan). Add the sliced ​​sausage, fill with sour cream sauce, mix, if necessary add a little water and press under the lid for 5-8 minutes. Meat should float in gravy, in consistence resemble liquid jelly. Season to taste with herbs and spices. Well, the Belarusian mocchanka with mushrooms is ready. Immediately before serving, the mochanka is stirred and served on a table, usually with pancakes and sour cream and a glass of bitter berry tincture or stalk.
