Omelette with squid

Omelette, originally, a dish of French cuisine, is a pan fried in a frying pan of mixed and lightly beaten eggs. The classical recipe for the French omelette does not imply the addition of milk, water, beer, flour, sugar, vegetables and fruits. Such dishes, now called the unifying word "omelet", are also known in other countries, this is a traditional option for breakfast, lunch or a day-night snack. Different national-regional variants of omelettes include other products typical for a specific locality, the methods for preparing omelettes also differ in some ways.

The carcass of the squid is covered with boiling water and is peeled, removed cartilage. We put the carcass in already boiling water and boil for 3 minutes, no more (otherwise the squid will be hard). We throw it back in a colander and wash it, cool it with cold water. We cut the squid with a thin short straw.

Cut in half along the stalk of leeks and cut each half (or one half, or just the white part, as you like) with thin half rings (we divide them by hands).

Finely chop the greens.

We break eggs into a bowl, add wine, whisk a bit or a fork (if you add 1-2 tea spoons of wheat or barley flour, the omelette will be more magnificent).

Heat the oil in a frying pan and lightly sauté the sliced ​​squid and leeks. Fill with egg mixture and quickly, but evenly sprinkle top with chopped herbs. Reduce the fire to the smallest and cover the pan with a lid. After a few minutes, the omelet will be ready (monitor visually). It will be good, turning off the fire, sprinkle a hot omelet with grated cheese and cover the frying pan with a lid for 1-2 minutes. The cheese should only fuse, but not flow. To the omelet you can serve light unsweetened wine.

Before you pour the beaten eggs into the pan with the squids and onions (or without it) cut, and fry several pieces of shrimp meat (they must be welded and cleaned beforehand). Most suited are medium-small shrimps.

Squid is cleaned, cooked and cut in the same way as described in the first recipe (see above). The fish fillet is dried with a napkin, cut across fairly thin pieces, slightly greasy, sprinkled with pepper and breaded in flour.

We beat eggs with flour and beer (preferably a mixer), there should be no lumps. Heat the oil in a frying pan and lightly fry the onions and chopped squid. We spread the pieces of fish from above and quickly, evenly distributing, pour the egg mixture. Top with chopped finely greens. Reduce the heat to a minimum and cover with a lid. After a few minutes (5-8, about that), the omelette will be ready (we control visually). If you sprinkle a ready omelet with grated cheese, it will be even tastier. Serve this nutritious dish with a glass of beer and / or a glass of Kummel (caraway vodka), or some strong tincture.
