Recipe for a cold pork

An obligatory attribute of any festive table in our country is a dish such as a cold. It is made from any kind of meat, but we want to tell you how to cook a pork chill. It turns out rich and very tasty. For a change, prepare a pork chill and with the addition of chicken or beef. To prepare the cavity, various parts of the pig are used. The jellyfish is cooked from the pig's ears and from the pig's head, as well as the cold from the pork shank.

At the pig head cut off the ears and pour it with cold water for 12 hours, during this time the water should be changed once. After that, the head needs to be cut across, but carefully, so that the skull remains intact. Wash the head again and put in a bucket, pour clean water.

When the water boils, the head should be cooked for 6 hours, constantly removing the foam and fat, then your jelly will turn transparent. If necessary, during the boiling in the container you can add a little water. After 2 hours in the bucket you need to put the cut onions and 4 tablespoons of salt, after the end of cooking, the onion will have to be removed.

After another two hours, add the chicken legs, bay leaf and pepper to the bucket. While all this is prepared, separately cook the carrots and cut it in circles, squeeze the garlic and place it all on the bottom of the dishes, which will be poured into the cold. When the meat is cooked, we remove the head and the leg and remove the brain, skin, bones and other fat parts of the head. All the rest cut into pieces and put in a bowl with carrots and garlic, and then pour broth from a bucket (it is desirable to do this through a fine sieve). We put the chill in the refrigerator for the whole night.
