Special juiciness and more interesting taste of chicken cutlets is achieved due to unconventional chopping of chicken meat. Instead of grinding it with a meat grinder or blender, we will chop the chicken with a knife on small cubes. Their size should not exceed seven millimeters. Even smaller we try to chop the peeled bulbs. Now chicken pulp is mixed with onion, seasoned with mayonnaise, brought to taste by adding pepper freshly ground black and salt and leave to infuse in the refrigerator compartment, tightening the bowl with chopped minced film or covering it with a lid. It is advisable to give a basis for cutlets to marinate for at least twelve hours, and it is better to keep it in the refrigerator during the day. So cutlets will turn out even more tasty and delicate.

Now add to the bowl with chicken meat and onion eggs, pour in the flour, mix, add salt if necessary, and proceed to the frying. To do this, we lay off the base of the cutlets in a pan-heated sunflower oil, without smell, and let the products be fried from two sides, turning them in the process to another barrel.

This variation of the recipe assumes the preparation of the basis of chopped cutlets with the addition of cheese. Additional tenderness and special taste will add to the products and kefir added to it, and garlic and spices will make the cutlets more piquant. Just like in the previous case chop chicken with a sharp knife and mix it with kefir, chopped onion and pressed through a press garlic. Now add the coriander, thyme, pepper and salt, mix and leave the mass for pickling in the refrigerator compartment. It is ideal to prepare a basis of cutlets from the evening, and to fry to start the next day.

Immediately before the preparation, add minced meat, ground on a small or medium grater, beat the egg, pour in the flour and mix. Fry the cutlets in the same manner as in the previous recipe, laying the base of the products with a spoon in a frying pan with oil and browning it from two sides.
