Soup chorba - recipe

Chorba - has hundreds of recipes: it is prepared with game, meat, poultry, fish or even lean. It is distributed almost in all Balkan countries and it is prepared differently everywhere, even in different regions of one country, there can be many differences in the recipe of this dish. We offer you two completely different versions of this wonderful soup.

Of course, you first need to soak the beans, so that in the future you have less time to prepare it. Prepared beans put on about two liters of water. Take parsley and separate the leaves from the stems, tie the stems with a kitchen thread and send them to the beans, putting there also peas of black pepper and coriander.

Wash all vegetables thoroughly and proceed to cutting. Onion grind is not very shallow since it should still be felt in this vegetable soup. Carrot and celery grind approximately centimeter cubes. First as a pan with butter, send as always a bow. In a simple vegetable oil, you can add a little unrefined olive, just for flavor. When the onions lose color and become transparent, you can attach celery and carrots to it and continue cooking at a low temperature. Tomatoes peel and cut into cubes, and in case of their absence, use two spoons of tomato paste.

From the sweet pepper, remove the seeds and membranes, then cut into small squares, but the hot pepper initially try to sharpness, then cut off the necessary amount and also remove the seeds and membranes, then chop it finely. Now add these crushed vegetables to the pan and continue cooking for another 10 minutes. Salt, pour the paprika into the pan, mix well, now finely chopped garlic, mint, thyme, cover for a minute with a lid and pour into the pan with beans, not forgetting to extract the parsley stems from it. Cook for about 3 minutes, add salt and sugar, pour the chopped parsley leaves, close the lid and wait for one more, finishing minute. It turned out that such a Serbian soup chorba from beans, although the recipe is very similar to the Bulgarian.

Recipe of Turkish soup chorba with yogurt

Cut the fillets into small pieces and proceed to marinating, squeeze out two cloves of garlic, lemon juice, add olive oil and pepper. Mix well and not put in the refrigerator, leave for three hours. Combine the flour, yogurt and egg yolk, using an ordinary halo, necessarily mixing the mixture well. Now gently pour in the warm broth, again constantly working with a whisk. Broth must be be warm, not hot, otherwise yogurt will curd and soup will not work. Now this mixture is poured into a pan and turn on a weak heating, the soup will gradually thicken, add boiled rice to it. Cut the onion very finely and put in a skillet with butter, then squeeze the same 1 clove of garlic. When the oil is completely melted, and the onion is lost color, sprinkle the paprika, cayenne pepper and fry for no more than half a minute, then add the mint and keep this sauce for another minute. Pre-salted soup is poured on plates, and on top, carefully added 1-2 teaspoons of this spicy and spicy sauce.
