Tartar - recipe

In cooking called "tartar" is meant an incredibly tasty yolk sauce with spicy additives. Also this is the most original dish from all the same French cuisine from beef or fish. The one and the other variant of the culinary composition we will consider today in our recipes.

Tartar sauce - home classic recipe

Preparing the preparation of tartar sauce, we combine yolks cooked in steep and raw eggs in a bowl. Then add the salt, the mustard, the ground black pepper and squeeze out the lemon juice. Initially knead the mass with a fork so that the boiled yolks dissolve in the liquid components, and then whisk the mixture a little with a mixer. Without stopping the whipping procedure, pour a thin trickle of vegetable oil without a smell and achieve clarification of the mixture and its thick cream texture.

At the final stage of the sauce preparation, we add to the liquid basis melniciously chopped cucumbers pickled, capers, green olives and garlic. Stir the mass carefully and let sauce for thirty minutes to stand.

Beef tartar - classic recipe

Particular attention should be given when preparing a classic beef tartar for meat. It should be the most high-quality and fresh, as in this dish it is not subjected to heat treatment. It must be chopped finely, mixed with olive oil, salt and two kinds of pepper and just stretch your hands well.

Additional ingredients such as pickled capers, gherkins, white salad onion, parsley and chives are chopped as small as possible with a sharp knife. We grind also on a grater the boiled hard-boiled and cleared eggs.

In the classic tartar, all the additional ingredients are stacked separately on the platter along with the meat. The latter is made with the help of a mold with cylindrical portions and is scraped on the sides with chopped chives. Separately, you must submit a Worcester sauce, Tabasco and ketchup.

If you want, you can mix all the ingredients in a bowl with meat and only then serve on a dish, decorating with greens and shnit-onion and adding sauces.

Salmon tartar - recipe with avocado

Salmon fillets, avocado pulp and cucumber without seeds are chopped very finely with a sharp knife. In the same manner, we chop the red salad bow. Spread the prepared ingredients in a wide bowl, season with lemon juice, olive oil, preferably cold pressed, add salt and pepper and mix.

We spread the received weight on a dish by means of a ring and we make out arugula and a cream balsamic. From the proposed amount, four medium portions of tartar are obtained.
