Peel carrots and onions, finely chop them and fry in vegetable oil. Champignons too, cut into small pieces and send to onions with carrots. Put out all together for about 3 minutes and put it in a saucepan. Rice thoroughly rinse and add to the vegetables, then pour boiled water. It should be two fingers above the level of rice.

Salt and pepper the dish, simmer it on low heat until cooked, and at the end pour in grated cheese and finely chopped garlic. Stir the risotto and eat while hot.
