Pizza can be safely called one of the most widely loved and popular dishes in the world. Not surprisingly, in connection with this, there were many variations of Italian pizza from other peoples. Thanks to this, everyone forgot about authentic recipes, which, meanwhile, also vary in different regions of Italy. Some of the variants of the classics we will discuss in the following recipes.

Italian pizza - a recipe at home

Even the recipes that we used to call classics now, to the original pizza, have little to do with, but in our time few would remain satisfied with a simple crust with tomato sauce and butter, so the recipe was filled with toppings. Below we will discuss the recipe for the basic "Margarita".

The preparation of this Italian pizza always begins with a test. Preheat the water to a temperature slightly above room temperature and lightly sweeten it. Pour the yeast and leave the granules to dissolve, and the microorganisms themselves - activate. When the yeast solution is covered with foam, pour it into the flour mixed with salt. In order for the base to hold the mold well and become crusted at the base, the dough itself must be carefully mixed for about 10 minutes. The kneaded dough is molded into a bowl and placed in an oiled bowl, then left for proofing in the refrigerator for 12 hours. If you do not have that much time, then leave the dough warm until it doubles in volume.

Divide the finished dough into portions of the desired size, stretch it manually, forming a disc as thick as possible in thickness, cover with a small amount of tomato sauce, leaving a small side, and lay out pieces of mozzarella.

Classical Italian pizza must be baked on charcoal, which in the home is replaced with a special stone. Such a stone for pizza pre-heat in a preheated oven to 250 degrees and gently, with a spatula, transfer the pizza to it. Thanks to this technology, the dough is fried from below, becoming crispy.

In the absence of a stone, a conventional cast-iron frying pan can be put into operation, preliminarily heated by the same principle. As a rule, cooking pizza takes 7-8 minutes.

Italian pizza on a thin dough - recipe

Taking as a basis the classic Italian pizza dough recipe described above, you can prepare another less common version of the classic Italian cuisine - pizza with white cream sauce .

Having stretched a basis for a pizza in a disk of equal thickness, take on a simple stuffing, for which it is enough to mix grated cheese with 2/3 cream. Arrange the filling in the center of the pizza, leaving the sides intact. Leave the pizza under the maximum heated grill on a hot stone for 6-8 minutes. Before serving, pour the remaining cream onto the surface and season with freshly ground black pepper.

How to cook Italian pizza?

Did you know that you can fry classic pizza? Prepare the dough according to your favorite recipe or what we described above. Heat the cast-iron frying pan in the oven at 230 degrees. Preheat about three centimeters of oil in a frying pan and lower the rolled disc of yeast dough into it. Fry it on both sides for about a minute and a half, and then put the sauces and fillings, and send the pizza for another minute in the oven.
