Tazhin: recipe

Moroccan Tazhin - a special culinary device - is a deep thick-walled clay pan with a lid of a special (conical) shape. Hence the name of the dish, which is cooked in this unique dish. There are many recipes for Tajin. Prepare it from mutton or beef, from poultry meat, from fish, there is vegetable tazhin. The preparation uses a variety of dried fruits, olives, legumes, dry seasonings, fresh aromatic herbs, honey, hot and sweet peppers, quinces, garlic, salt lemons and various other ingredients.


How to cook tazhin?

To begin with, you need to purchase the Tajin itself. Many recipes have been invented, but the final result will still depend on the quality of the tajin. To prepare a dish, firstly in the lower part of the Tajina, set on fire, fry the chopped onions with spices. Then add pieces of meat, lightly fry them, cover with a tapered lid and simmer until tender. Approximately 10-20 minutes before the completion, wash the dried fruits.

We cut each quince into four parts, remove the core, sprinkle the slices with lemon juice, so it does not darken, and lightly cook in a small amount of sweetened water. Fry in an open tajina peeled and finely chopped onions in butter. Add the chopped meat and fry for about 5 minutes, stirring the spatula. Add a little sweet broth of quince, dried spices and finely chopped ginger root. Cover the lid, turn down the fire and extinguish. Minutes for 5-10 before the readiness to eat slices of quince with warm butter and honey, add cinnamon and vanilla and put in tajin. We will serve with fresh wheat cakes and freshly brewed tea.

Tazhin of chicken

You can cook tazhin from chicken with prunes and dried apricots.

We make chicken breasts on fillets and cut them into small pieces. Clean and finely chop the onions. Fry the onions in a tazhin on oil, add the chicken pieces, reduce the heat, add dry spices, add salt, cover with a lid and stew for 40-50 minutes on low heat. If necessary, you can pour a little water. Dried apricots and prunes (individually) we will fill with boiling water. Salt the water after 5 minutes, remove the stones from prunes. For about 10 minutes before the end of the chicken quenching, add the dried apricots and prunes to the tazhin. Immediately before serving, sprinkle everything with crushed herbs and garlic, sprinkle with lemon juice and serve it to the table.

Tazhin of the duck

You can cook a delicious tazhin from a duck.

Remove the bones from the duck legs and cut the meat into slices of 30 grams, and do the same with the breast. Put the meat in a bowl and sprinkle it a mixture of dry spices. Add and mix. We put in the cold for an hour. In the meantime, we will peel the onions and cut them into short straws. Clean and finely chop carrots and ginger. When the meat of the duck is faded for an hour, we will warm up the vegetable oil in the tazhin and fry pieces of duck with onions, ginger and carrots. Cover the lid and put it out on low heat. If necessary, pour water. For 20 minutes before the readiness, we will add to the tazhin a chopped short thick zucchini straw and raisins. Add more mixtures of spices. 5 minutes before the readiness to add hummus and mix everything. Immediately before serving, sprinkle with chopped herbs and garlic.
