If all this can not be found, use a mixture of dark soy sauce with lemon juice or lime with the addition of sesame oil - a typical Asian sauce - you can still season with hot pepper and garlic. You can add a little honey or even white sugar. Next, the necessary amount of noodles should be soaked in hot water (not in boiling water, but it turns out porridge). Noodles are kept in hot water for 10-15 minutes, until it becomes elastic, but still remains a little more elastic. It is better to be a little underdog, so to speak, to cook al dente. Then the water is drained, and the noodles are fried in a wok, with the addition of sauce and other ingredients. Ready-made Pad Thai is usually sprinkled with ground roasted peanuts.

First sauce. Sugar or honey is dissolved in a mixture of fish sauce and tamarind (preferably in a water bath or on low heat). Add carefully crushed garlic and red pepper. The sauce can be stored for future use and stored in the refrigerator. Noodles are soaked in a bowl of hot water (not boiling water) for 10-15 minutes. We throw it back to the colander. Warm up the wok, pour sesame oil (can be mixed with sunflower oil) and fry the peeled onions, cut into thin golden straws. If we use shrimp filler, then add it. All fry very quickly, on high heat, vigorously shaking the wok and actively manipulating the scapula. On request, we add separately fast-fried meat. Add the noodles, lightly fry all together and add the sauce. We actively mix. Add soya sprouts and chopped green onions, coriander, stir and remove from heat. Before serving, sprinkle each serving with ground peanuts, put lime or lemon on the side.
