When preparing this soup, pour a vegetable broth into the pan or just filtered water and warm it to a boil. We pour out washed red lentils and bulgur into the bowl, add crushed red paprika and peas of sweet-scented pepper, let it boil again and, reducing the fire to a minimum, cook the soup under the lid. Without wasting time we clean the bulb, cut it finely and fry it with warm vegetable oil in for four minutes. After that, add the tomato paste and pass the mixture for another couple of minutes.

We spread the contents of the pan into a saucepan with soup, add salt and dried mint to taste and leave it on the fire of the same intensity until softness of lentil beans and bulgur. We serve a fragrant soup with fresh parsley or cilantro.

Instead of tomato paste, you can add to the lentil soup with bulgur three medium ripe fresh tomatoes, clearing them first from the skins and chopping in a blender. Also, if desired, for a greater saturation of the food, you can replace water or vegetable broth with a broth based on meat, and together with a sweet paprika, add a little ground chili pepper.

It is not recommended to prepare a Turkish soup with bulgur and lentils for future use, since by the next day it will absorb all the moisture of the broth and turn into a mess.
