Grissini - Italian pastries, which are crispy bread bread sticks from wheat flour, cooked with the addition of cheese, dried tomatoes, olives or without them. Usually Grissini, about the recipes of which we will tell a little lower, it is easy to meet in the bread baskets of Italian, and not only, restaurants. They look like our breadsticks , but only in appearance. The taste is very different.
Grissini - bread sticks with olives and cheese
Ingredients:
For the test:
- flour - 500 g;
- dry yeast - 25 g;
- water 270 ml;
- olive oil - 2 tbsp. spoons;
- sugar - 1 tbsp. a spoon;
- salt - to taste.
For filling:
- olives (without pits) - 10 pcs .;
- cheese hard ("Parmesan" or "Grana Padano") - 70 g;
- basil dried - 2 tsp.
Preparation
First of all, knead the dough: in a bowl with warm water, add sugar and yeast, completely dissolved. We pour half of the flour, mix thoroughly, pour in the oil, mix again and then pour the remaining flour, stirring the dough constantly with a spoon. As soon as the dough becomes too elastic for stirring with a spoon, put it on a flour-dusted table and proceed to manual kneading. Meter the dough until it ceases to stick to the hands, but it remains soft and elastic.
The finished dough is divided into 2 parts, each of which is rolled into a thin pancake. On the middle lay ¾ of all grated hard cheese and evenly distribute the surface not reaching 2-3 cm to the edge.
We repeat the same procedure with the second half of the test, adding to it olives and basil.
