Lightly sprinkle the flour with a working surface and roll the dough into a circle with a diameter of about 30-35 cm. Put it into a split shape for a cake with a diameter of about 30 cm. Cut the edges of the dough, leaving about 1 cm behind the sides (bend it inwards). The surface of the dough should be lined with foil or baking paper, and from the top we pour dry beans ( chickpea or lentils) for the cargo. Bake this backing for about 15 minutes, then remove the weight and foil or paper. Return the form to the oven for another 10 minutes, then remove it - it's ready.

Finely chopped onions and mushrooms passer in butter in a frying pan and brawn for 15 minutes, stirring with a shovel. The filling should not be watery.

Whisk or a fork, lightly beat eggs with milk, season with ground black pepper. You can also add nutmeg and other spices, typical of Mediterranean culinary traditions. Also add to the egg-milk mixture half of grated cheese.

Onion and mushroom mixture spread on the basis of the dough, sprinkle with the remaining cheese and finely chopped greens. Fill the egg-cheese mixture with milk. Bake the kish for 25-30 minutes. The top of the finished pie should have a beautiful golden hue.

Finished slightly cooled chicken cut into segments-portions and served with light light table wine.

Approximately following the same recipe, you can cook a bowl with mushrooms and potatoes and / or ham. Just add to the filling of finely chopped pre-cooked potatoes almost ready and chopped ham.
