Ricotta cheese is mixed with 1/3 sugar, add vanillin and mix. Egg whites are combined with the remaining sugar and beat to a thick foam. When the cake is browned, we take it out of the oven and spread the filling evenly, using a confectionery syringe to squeeze out the protein cream from above. We send the cake to the oven and bake at 200 degrees for 20 minutes until the proteins acquire a brownish hue.
