Salad «Olivier» - recipe

The classic of any feast is Olivier salad, which, for the whole history of its existence, probably changed its formula in the most categorical way in comparison with other snacks. Even before the revolution, the composition of the dish included boiled crayfish, black caviar and hazel grouse with capers, but during the Soviet times it was modified beyond recognition: practically all the ingredients of the dish were replaced with more affordable winter vegetables, boiled sausage or chicken. In this material, we recall both the classic recipe for salad "Olivier" and its post-revolutionary variations.

As we said above, the Soviet classics were prepared according to a modest recipe, the meat of hazel grouses was replaced by a much more accessible chicken meat and the salad became widespread among the masses. The popularity of the recipe with chicken does not subside until now, the dish prepared according to this recipe is most often found on holiday tables of Eastern Europeans to this day.

Potato tubers and carrots thoroughly wash and cook until soft. Since the red meat is much juicier than the chicken breast, it is preferable to add it to the salad, and therefore take chicken drumsticks or thighs (and, possibly, a whole leg) and put the bird to boil next to the vegetables. When the meat is ready, cool it, remove the skin, and dissect the flesh into fibers. Chopped boiled vegetables clean and cut into cubes. Pieces of the same shape and size chop and pickled cucumber with boiled egg. Combine all the prepared ingredients together, complement the dish with greens and peas. Season the salad with mayonnaise and let it cool before serving.

First, boil the cancer necks and carcasses of hazel grouses separately from each other. Cut the meat of the crayfish from the shell and chop it. Separate the flesh of the hazel grouses with fibers. Hard-boiled eggs are also finely chopped, and lettuce leaves rip. Chop the capers and combine all the ingredients in the salad bowl. Supplement the dish with caviar and soy paste, re-mix everything so that the paste is evenly distributed.

Sauce for the classic "Olivier" - homemade olive mayonnaise , for the preparation of which you need to beat the egg yolks, continuously pour oil to them with a thin trickle. When the emulsion is ready, season it with a salad and cool it.

How to make a salad "Olivier" - a recipe with sausage?

No less popular than a salad with chicken in the composition, and enjoys a recipe with boiled sausage. The latter includes all the same ingredients, but chicken in it is replaced with an even more budgetary "Doctoral" or "Milk".

Boil the potato tubers directly in the peel with the carrots, and both root vegetables must be washed before cooking. Separately, boil hard-boiled eggs, chill, peel them and cut them. Slices of the same size cut and peeled potatoes with carrots. Chop the salted cucumber. Mix all the ingredients together, complement the dish with peas, dill and mayonnaise, stir again and serve, pre-chilling.
