Scorzonera - useful properties

Scorzonera, or in another way - black carrots, Spanish goat, sweet or black root - this biennial plant, which due to the huge useful properties are cultivated in many countries.

Useful properties of Scorzoners

Scorzoners include biologically active substances, its root contains saccharides, insulin, levulin, asparagine, pectic substances, copper, iron, potassium, phosphorus, manganese, calcium, zinc, as well as vitamins PP, C, E, B1 and B2. Due to the scorzoner insulin, it has healing properties in diabetes mellitus, and with asparagine improves heart function and normalizes kidney activity. In folk medicine, black carrots are also used to treat digestive disorders, as an effective analgesic, for atherosclerosis, avitaminosis, anemia, obesity, gout and rheumatism.

Using the root scornery

This plant is actively used in cooking for cooking first, second courses, sauces and salads. The flesh of the root is white and has a sweetish taste. In its raw form it is practically not used, a piquant taste appears, if the scorzoner is cooked, or roast the already boiled root. In its boiled form, it tastes like asparagus, which is why it is often called "winter asparagus". This product is also used in pickles, to which it gives a special fortress and appetizing crunch. A dried scorzoner is often used as a seasoning for soups.

Coffee from Scorzonera

Scorzonera is also suitable for fans of coffee drinks. Dried black root is added to the coffee, replacing them with chicory , or prepare a tasty drink instead of coffee. To create coffee from scorzoners it is necessary to cut the washed root into pieces and place it in the oven at a temperature of no more than 50 degrees. Dried roots should be grinded on a coffee grinder and dissolved in boiling water.
