Semifredo with mascarpone

Semifredo is a soft Italian ice cream, which is prepared with the addition of cream or fatty Italian cheeses, like ricotta and mascarpone . In the recipes, we will then prepare sevenfredo using the latter.

Cut the vanilla pod along the half and take out the seeds. Milk pour into the saucepan and add to it the seeds of vanilla. Heat the milk over medium heat, not letting it reach the boil.

In a separate bowl, combine egg yolks with sugar and, without intermittently stirring, pour in hot milk (previously extracted vanilla seeds by passing the liquid through the gauze filter). Let the milk-and-egg mixture cool down.

Meanwhile, in a blender, we rub a glass of berries. To smooth the mashed potatoes, we rub it through a sieve after whipping.

Cool the cooled egg and milk cream with mascarpone cheese, add berry puree, remaining whole berries and chocolate chips. The homogeneous mixture is distributed according to the shapes and put in the refrigerator for 3-4 hours. Dessert sevenfredo with mascarpone should be served immediately after removal from the freezer.

Preparation

Before you prepare the sevenfredo with mascarpone, you should make a sauce for it. In the saucepan bring the boiling port with sugar and boil it to a third of the original volume. Add cherries and cook again for 2 minutes. We remove the sauce from the fire, let stand for about 10 minutes, and then cool in the refrigerator for another half an hour.

For seven-fried we beat mascarpone with cream , powdered sugar and a pinch of salt. Add chocolate crumb and cookie crumbs. The form is covered with food film and poured into it the future ice cream. Let the dessert freeze in the freezer for 50 minutes, and then serve with sauce, immediately after removing from the freezer.
