The real English shepherd pie, the recipe of which has hardly changed over many centuries, is prepared only from the meat of lamb or young lamb (the English word "shepherd" can most definitely be translated as "shepherd", which sheep grazes, and not any other animals ).

Modern options

Early cookbooks contain descriptions of a shepherd's pie from the remains of roasted (or baked) meat and mashed potatoes. Meat was chopped by hand. Now, instead of mutton, veal or beef is often used, meat is turned into mincemeat not manually, but with the help of a meat grinder. This option is called cottage pie (cottage pie). And yet the classic English shepherd pie is better to cook from lamb.

How to cook a shepherd pie? To begin with, vegetables are cleaned. Potatoes are cut into large pieces, onions are smaller, carrots are thin straws (or we rub on grater), stalks of celery - arbitrary. Garlic crushed in any convenient way. Potatoes boil in boiling slightly salted water until cooked, and then salt the water and stir potatoes in puree. Add a gram of 30 butter, slightly add and pepper. Thoroughly mix. Cool the mashed potatoes, then add the egg and mix again. Cover the container with a lid and set it aside for now. We will heat 20 g of oil in a frying pan. Fry the onion first, then add the carrots, then the celery. Actively manipulate the scapula. Now add the stuffing, stir and tumble on medium heat, continuously mixing. At the very end of the process, add the garlic.

We pour the flour in a separate dry frying pan until light rudeness and let the broth be poured. We stir it, bring it to a boil and protomim for 1-2 minutes. Reduce the heat and stew for about 8-10 minutes. In a baking dish, oiled, lay out layers of minced meat, then mashed potatoes. You can repeat the layers twice. Place the mold in a preheated oven to 190 ° C. Bake approximately 50-60 minutes. The ready English shepherd pie is good to serve for dinner (warm or cold) with a cup of hot broth.

The American version

You can cook the shepherd pie in the American version, for this we add to the list of ingredients a gram of 170-200 grated hard cheese, which we will interleave the layers and pour the casserole on top. The American version, of course, tastier and more refined. Of course, it's nice to serve the shepherd's pie to a table with branches of fresh herbs (parsley, coriander and basil). You can serve light table wine. I do not think bread should be served.
