Soup on vegetable broth - recipe

Light vegetable soups are relevant at any time of the year, because they are able to warm in the cold and saturate, without overeating in the summer. We decided to devote this article to this universal dish and tell you about the recipes of soups on vegetable broth and vegetable soups on meat basis.

In the water we put onions, celery, carrot circles, cubes of peeled potatoes, cauliflower. Chop the vegetables with cumin, dry mustard, salt and pepper, put the bay leaf. Cook the vegetables for 15-20 minutes, then fall asleep in a pan of lentils and cook the soup for another 30 minutes. After the beans have become soft, we put the cut tomatoes in a saucepan in our own juice and remove the dish from the fire. We extract the laurel from the soup and we rub it to homogeneity, after which we dilute the puree with the ready-made vegetable broth. Preheat the soup on vegetable broth again 5-7 minutes and serve it to the table.

Vegetable soup with chicken broth

We cut the leeks with thin rings, onions, celery, carrots and zucchini - cubes, cut the string beans in half. In the pan, pour the oil and lay the vegetables. Fill the vegetables with a couple of tablespoons of water and simmer on low heat until the liquid will not evaporate, avoiding browning. Fill the vegetables with chicken broth and cook the soup for 30 minutes on a small fire.

While the soup is brewed, tomatoes, garlic, a bunch of basil and the remaining oil are blended with a blender. Add the tomato puree to the soup, season it to taste and remove from the plate. You can serve the dish both in cold and hot.

By the way, vegetable soup can be cooked on any meat broth, for example on broth from another bird, beef or pork.
