Duck - a very elegant and festive dish, without which there will not be any solemn festivities. How to cook a duck, stuffed with buckwheat, we have already figured out, and now it's time for no less delicious filling - rice with the addition of fruits and spices.

The duck carcass is washed and wiped dry. Clean the bird rubbing with a tablespoon of butter, generously sprinkle with salt and pepper, and leave the hours for 2-3.

In the meantime, you can do rice. Krupu washed and boiled until cooked. Prunes are poured with boiling water for 10-20 seconds, after which the liquid is drained, and the dried fruit is cut into large pieces. Mix rice with prunes, add to them oregano, salt, pepper, the remaining butter and the garlic passed through the press. We supplement the stuffing with chopped herbs.

Fill the carcass with rice and sew the inlet with threads. Duck in the oven with rice should be baked in foil, so that the bird is not burnt. We put the duck for 2 hours in the oven, heated to 180 degrees. Periodically, we water the bird with salty juice and fat, and 30 minutes before cooking remove the foil, to duck brown.

Let's start with the preparation of marinade for duck, for this we need to mix soy sauce, orange juice, honey (half the whole amount), thyme and paprika. Pour the duck with the prepared marinade and leave for 1 hour.

In the meantime, proceed to the filling: we wash the rice and put it on the bottom of the brazier, we put the pieces of apples on top, add a couple of tablespoons of orange juice, a pinch of thyme, paprika, soy and pepper. Finally, put the dried apricots and nuts on top of the rice. Fill the rump with water and cook under the lid for 10 minutes, then leave to stand for another 5 minutes.

Marinated duck we dip with a kitchen towel (we do not pour out the marinade). We fill the bird with rice with spices and nuts, and seal it in the sleeve for baking. Duck in the oven with rice in the sleeve will be prepared for 40 minutes at 170 degrees, after which the sleeve is cut and removed, we grease the bird with marinade, pour with fat and cook without sleeves for another 25 minutes.

Duck carcass washed and dried. We rub the bird with a mixture of mustard, mayonnaise, salt and pepper, and leave for 1-2 hours.

Boil and rinse the rice. Heat the vegetable oil in a frying pan and fry it on first grated carrots and onions until the transparency of the latter, and then we place the crushed mushrooms until golden. In the last 30-40 seconds of cooking, chopped garlic is also sent to the pan. Mix rice with rice and completely cool. Stuff duck carcass, cover the cavity and send the bird to bake 2 hours at 200 degrees on a baking sheet with 250 ml of water. Periodically we water the duck with the allocated juice and fat. As soon as the bird blushes - cover it with foil.
