For each kind of cheese, just like wine, you need your own unique combination. Some cheeses are good with sweet fruits, the rest - with honey, or nuts. Let's start cooking with the dough: mix together the sifted flour, salt, sugar and grated cheese. With the help of a mixer, beat the mixture with butter into a crumb. Now sprinkle the crumb with a small amount of ice water so that the dough gathers into a single lump. After that, the basis for the pie can be divided into two parts: one a little more and another smaller, wrap the oilcloth and place it in the refrigerator for the night, or for an hour in the freezer.

For the filling mix sugar, port, vanilla sugar, ginger, nutmeg, add a stick of cinnamon and put the mixture on the fire. We clean and cut the pears in half, take out the seeds and cut them in half again. As soon as the aromatic mixture and wine and spices boil, add pears and leave to stew for 20 minutes. Meanwhile, put a small bowl in the freezer.

We take soft pears from a spicy mixture and put them in a pre-cooled bowl, and evaporate the liquid in a saucepan to the consistency of the syrup. Add the starch in the syrup and leave it to thicken, after which we let it cool.

We roll the dough ball and put it in a mold, we spread the pears on top and fill them with syrup. A small piece of dough serves as a lid for the cake, which should be rolled up to the same thickness as the base. Using your fingers, glue the lid and bottom of the cake together, make a hole for the steam and lubricate the pie with whipped egg yolk. We bake a cake at 180 degrees for 30-40 minutes.

Gruyere cheese can be replaced with cheaper and affordable Cheddar, it will be delicious in any case.

In a bowl, mix the sliced ​​pears, sugar, starch and salt, we rub the mixture with the fingers to evenly cover the pieces of the fruit. The dough is rolled and placed in a greased form, evenly distribute the pear filling. In this recipe, we will not cover the pie with a batter, but use a mixture of cheese, flour, sugar and salt - mix all the ingredients and add a soft oil. The oil crumb is evenly distributed over the dough.

We send the cake at 200 degrees for about 25-35 minutes, until golden brown. We let the dish cool for 15-20 minutes, and serve it to the table with an ice cream ball.
