Chast Breast Pastor

Pastoral - a traditional dish of Moldova and Romania, initially, along with corned beef and basturma, served as one of the recipes for preserving meat, but to this day it has come down as a meat delicacy loved by many. Initially, pastor was prepared from pork or beef, but then the recipes from poultry, mainly turkeys and chicken, also gained popularity.

Chicken Pastrama - classic recipe

As always, start with the classics - this pasta is brackish and spicy, insanely aromatic and perfectly suited as a replacement for traditional sausage.

Preparation

Chicken breast is separated from the bone, the fillets are washed, dried and cut from fat and films. Both fillets are placed in saline solution for 2 hours, then dried and cut along, but not to the end, but to get a continuous layer. We plaster this layer with a previously prepared mixture of spices, mustard and vegetable oil, curl the future pastry with rolls, rewind and thread the remaining mixture of spices on the outside. Preparation of the pastry takes about 2 hours, with the first 15 minutes the roast is baked at 250 degrees, and then the oven is turned off and the cooking continues on the residual heat until it cools completely.

Preparation

Chicken my fillet and cleanse from the films, then soak in the saline solution for 2 hours.

Salted meat is washed, dried and cut along into one continuous layer. In a small bowl, prepare a mixture of mustard, honey, oil, pepper and pressed garlic, cover the layer on both sides, and then wrap it in a roll and fix it with a thread. Sprinkle the resulting roll with paprika and coriander seeds.

The cooking procedure remains unchanged: first the pastor is placed in a preheated oven for 250 minutes for 15 minutes, and then the oven is turned off, and the meat is cooked for another 1.5-2 hours on the residual heat, without opening the door.

"Simple" chicken pastrama - recipe

If you flatly refused to purchase meat products - then chicken or meat pastry will be more than enough to replace the purchased products. Natural fragrant meat, soaked in spices, perfectly complement your sandwich in the company with pieces of tomatoes and cheese.

"Simple" pastrama from a chicken breast is prepared in a somewhat different, more convenient way. For him, it is necessary to warm a glass of wine with spices (except Italian herbs), honey, mustard and pressed garlic. In the resulting warm marinade, we put chicken breasts cleaned of excess fat and films. The pickling process takes from 2 hours, up to 1 day, depending on how much time you have, however the more, the better. Finished spicy breasts can be left in its original form, or you can form a roll. Anyway, the surface of the future pastrama before cooking is abundantly sprinkled with Italian herbs, and after laying the dish on a foil lined with a pan.

Then everything is as before: we heat the oven to 250 degrees, prepare 15 minutes, turn it off and let the pastry cook for another 2 hours. Bon Appetit!
