Minestrone is a traditional light Italian vegetable soup. This dish comes from rural peasant culinary traditions. Italians prepare it exclusively from seasonal vegetables, sometimes with the addition of rice or pasta.

Sometimes for cooking minestrone vegetables or (part of vegetables) are fried in olive oil, but only quite easily, on low heat. The composition can include onions, fennel, carrots, cabbage of various species, celery, zucchini, pumpkin, sweet pepper, eggplant, turnip, beans, asparagus, etc.

In the modern version, sometimes cut vegetables are cooked until ready, then half of the finished vegetables are ground with a blender until smooth and returned to the soup.

Preparation

My potatoes, cut each tuber into 4 parts along (or somehow in another way) and lay it in a pan. We also lay a young string bean and washed rice. Fill broth or water and cook for 10-12 minutes with the addition of laurel, pepper peas, cloves and bay leaf.

At the same time, in a frying pan in olive oil, lightly fry the sliced ​​leeks (or quarter normal rings) with carrots, cut into strips. Add green peas and stew for 8 minutes. We shift the contents of the frying pan into a saucepan along with the chopped sweet pepper and the broccoli, disassembled into small cots. Cook all together for 8 minutes. You can 3 minutes before the readiness to add a little tomato paste or finely chopped tomato (2-3 pcs.).

With a ladle or a noise, we extract some vegetables from the pan (about 1/3) and put them into a plate. Slightly cool, we rub with a blender and return it to the pan with soup.

Before serving, sprinkle with chopped garlic and greens. Red spicy pepper and ground black spice individually.
