The dough for liver pancakes is prepared simply, but we prepare the liver carefully: mine, remove the films, watch to avoid bile, pass through a meat grinder or grind with a blender. To the ground liver add eggs, salt, pepper, pour in milk or dairy products, stir well and start pouring the flour. Depending on the initial density of the mass (on kefir it turns out to be less liquid than on milk or whey), a different amount of flour may be needed. The density of the dough is determined by the ability to distribute it in a frying pan (slightly more liquid than pancakes). Frying pan warm up well, grease a slice of fat and bake pancakes on medium heat, evenly browning from both sides. You can serve such pancakes with liver and with rice, and with salad, and with potatoes, and you can collect cake from them.

If the liver pancakes are not very much liked at home (although they usually go "with a bang"), you can bake ordinary pancakes, and use the liver as a filling.

The liver should be prepared in advance - boil it until cooked - about 15 minutes, then cool in broth, then pass through the meat grinder. Finely shred the bulb and lightly fry it in half the vegetable oil, then add the liver, salt, pepper and, stirring, stew for 3-4 minutes. Dough for pancakes plant from soda water, eggs, a little salted flour. We add vegetable oil, mix everything well, and greasing the frying pan with fat, quickly pancake pancakes, turning them over as they brown. In warm pancakes we wrap the filling. On the same principle are prepared and pancakes with a liver and an egg - before wrapping the filling, we add in it finely chopped pre-cooked eggs.
