To a family dinner on weekends, it is good to cook pies with mushrooms, which can be served with soup, hot broth, soup or tea.
Dough for pies is best done unsweetened yeast or puff. If you do not want to mess around, puff pastry can be bought at grocery stores, and yeast can be bought in kitchens and other catering establishments. It is better to knead the dough by yourself - so you will be sure of the ingredients used.
Mushrooms are better to use fresh, grown artificially - you can be sure in them. You can, of course, use forestry if you are sure of their edibility and that they did not accumulate various harmful substances from the environment in the process of growth (this happens easily in mushrooms). Dried mushrooms are pre-soaked in water for several hours. You can make a filling for pies with salted or pickled mushrooms , they should be poured with hot water, wait until it cools down and thrown into a colander.
Recipe for pies with mushrooms
First we knead fresh yeast dough.
- wheat flour is high-grade - 3 cups;
- dry yeast - 1 packet (or 3 times more pressed);
- sugar - 2 tsp (for activation of yeast);
- milk or water - about 150-200 ml;
- sunflower oil for the lubrication of hands.
- mushrooms (for example, fresh, white, oyster mushrooms or champignons) - 1 kg;
- onion - 1-2 pcs .;
- sunflower oil.
Preparing the sponge. A little warm up a little milk or water (not above 35 degrees C) and dissolve sugar mixed with two tablespoons of flour. We add yeast, mix and place in a warm place. The capacity should not be filled more than 2/3 of the volume, otherwise the odor will run away.
When the opara has approached (usually from 20 to 40 minutes), we pour it into a large bowl, add a little bit of sifted flour and mix the dough (with hands). The dough should not be too liquid or on the contrary too steep.
Sprinkle the working surface with flour and thoroughly knead the dough. We put a lump in a bowl, cover with a clean towel and place it in a warm place (the best temperature is about 30 degrees C). When the dough is good, we knead it and mix it. Again, we place it in a warm place. The cycle is repeated 2-4 times.
While the dough is suitable we will fill. Heat the oil in a frying pan. Lightly fry the finely chopped onions. Add the chopped mushrooms and fry, stirring, for 3-5 minutes. Slightly pepper and salted. Reduce the heat and simmer for another 15-20 minutes. We throw it back to the colander (the sauce that drains can be used to refuel the soup).
Now roll the dough into layers, cut out of them with a glass or a special shape of a circle, put a filling on each spoon and form pies, splitting the edges. In general, the forms of pies, as well as the methods of dividing the dough, are variable.
