Entrecote in the oven

The entrecote in the classical sense is meat cut from the dorsal part of the cowhide, between the ridge and the ribs. In case the same pieces are carved from a bull's carcase, a calf or a cow is called a "medallion", (since it looks like a medal in the form of a cross-section).

Currently, the word "entrecote" refers to any piece of meat (usually beef) about 1.5 cm thick, about the size of a palm. Meat can be on the bone or without it.

Usually steaks are fried in a frying pan, but this method of cooking in principle is not the most healthy. You can approach the preparation of entrecotes in another way, namely: bake in the oven. Baking, in general, is one of the best ways of thermal processing of meat, the dish turns out not only healthy, but also tasty.

Meat before cooking with water is not mine. Lightly beat off the entrecotes, a little salted. We heat the oil in a frying pan (it should be a lot). Fry entrecotes on both sides for a short time on high heat (you can on a grill pan). You need to make a crust on the meat.

We shift the entrecotes into a mold, sprinkle a little with ground pepper (this can be done after cooking), pour oil, which was fried. Now put the form in a preheated oven and bake for 1 hour. To make it juicier, you can use a form with a lid or tighten it with foil. The entrecotes should turn out juicy and tender. If you want a crusty crust, for the last 20 minutes bake the meat without a lid or unfold the foil.

Ready-made entrecote, baked in the oven, served with potatoes (boiled or mashed potatoes). Be sure to make a dish with herbs.

It's good to serve some gravy to the entrecote.

An approximate sauce recipe: mix light wine with natural fruit vinegar or lemon juice, add a bit of the prepared mustard , pounded garlic spices, salt. You can also include in the composition of the sauce quail eggs (better protein or yolk separately).

To the entrecotes of beef, it's good to serve dried bread or fresh broken baguette , fresh vegetables, fruits and red table wine.
