Pineapples from courgettes

Fortunately, the times of total deficit have passed, and today you can buy anything and practically in any quantities in different parts of our large country. Still, sometimes you have to look for substitutes for some products: perhaps they do not like the price or quality of what retailers offer, or the product is not available anyway. Pineapples do not grow everywhere, and it was not easy to find a canned or frozen product in the Soviet era, and so a long time ago a method was invented to make "alternative" pineapples from zucchini.

How is this possible?

Zucchini - in general a unique product. It is extremely useful (contains a lot of fiber, vitamins B and K, iron, magnesium and potassium) and is tasty in fried, stewed, baked and stuffed. However, zucchini has another unique property: if you add sugar to its pulp, it acquires different shades of flavor, due to which zucchini jam is very popular throughout the post-Soviet space. Adding different ingredients, our compatriots received a completely unique dish - pineapples from zucchini, the recipe of which we will quote.

To begin with, the citrus is thoroughly washed with warm water, you can with a brush. Wipe them dry and cut with a sharp knife into thin slices (circles or semicircles), removing the bones and trying to prevent the juice from flowing out. Marrows my and cut the peel. Zucchini should be young, so that the seeds are not felt in the finished product. We cut the cleaned zucchini with thin slices or short straws. In a deep enameled container we lay layers of courgettes, lemons, sugar, oranges and leave for a few hours to make the juice appear. If the juice is small, cook the syrup from a glass of water and half a glass of sugar, but usually juice is enough. We start cooking our pineapples from zucchini at minimum heat and, when the mixture boils, continue, gently stirring, prepare the product. The mixture is boiled for about half an hour, then it cools slowly, and after that it is transferred to a suitable container.

Vitamin Drink

If the zucchini ripened a lot, and the fruit is not very, you can roll a fragrant and very tasty compote from zucchini with pineapple taste. This flavor of cucumber is given by citric acid, so we store lemons.

Kabachkov will need twice as much as lemons, so the initial quantity of the product is indicated with a wide spread. Vegetables should be washed, dried, cut into slices and removed with seeds. In young zucchini it is less, accordingly they need about 2 kg, for not very young the core takes about half the volume, so you can take more zucchini. The remaining dense slices are cut by small segments. Cook the syrup from the water with sugar, when he leaves for 2 minutes, pour in zucchini and cloves. Cook for a quarter of an hour on a slow fire, after which we squeeze the juice of lemons into the compote. Let's boil for about a minute and a half to save the maximum benefit in our drink. You can pour into sterilized jars and close - you will get compote from zucchini, taste - like pineapple.

Magnificent vitamin drink can be prepared and somewhat differently. We add useful berries to the original product. For example, sea buckthorn, cherry plum, citrus juice or pineapples proper. So it's not too difficult to make canned courgettes like pineapple.
