Cake "Black Forest", aka Schwartzwald cherry cake is a recipe, time-tested, after all, born in 1930 in Germany, dessert for a few years gained unprecedented popularity around the world, winning the hearts of gourmets and just sweet tooth. Chocolate cakes according to the traditional recipe are soaked with cherry "Kirsch", they are padded with sweet cherries and decorated with whipped cream, well, how to resist this dessert?

Chocolate cake "Black Forest" - recipe

Cherry cake "Black Forest" according to the classic recipe is prepared on the basis of two types of cakes: sand and biscuit, the components of which are described in the following recipe. If you want to eliminate the short dough from the recipe, simply cut the amount of butter, flour and sugar by half.

Preparation

1. Let's start cooking with a simple constituent - sandcakes. For them it is necessary to mix up to homogeneity 100 g of soft butter, 170 g of flour and ½ tbsp. Sahara. We put the dough on a baking tray, pierce it with a fork all over the area and bake at 170 degrees for 20-25 minutes.

2. In the meantime, you can do cooking biscuit: soft butter whisk together with sugar, gradually pouring "Kirsch" and whipped egg yolks.

3. Then add to the mixture melted black chocolate, almonds, grinded into powder, flour, 2 tbsp. spoons of starch and baking powder, everything is again thoroughly mixed.

4. Whisk the whites to white peaks with a tablespoon of sugar, add the air mass to the biscuit dough, gently stirring the movements from top to bottom.

5. We distribute the biscuit dough by forms and set to bake at 170 degrees - 35-40 minutes (do not open the oven, otherwise the cakes will settle!).

6. While the biscuits are baked-we prepare the syrup: mix 2 tablespoons of cherry juice with the starch, put the sugar in the remaining juice and put the future syrup on the stove. We wait until the mixture of juice and sugar starts to boil, we fall asleep ½ st. spoonful of cinnamon and throw the clove bud for 5 minutes, for the fragrance, after which we extract it from the mixture.

7. Add the starch-cherry mixture to the finished syrup with a thin trickle, mix everything thoroughly.

8. Cooled biscuit cakes impregnated with cherry "Kirsch", if "Kirsha" was not found - prepare a thick sugar cherry syrup, and pour vodka into it.

9. Sand cake cover with a layer of cherry jam or confiture.

10. Whole cherries are evenly distributed over all the cakes.

11. On top of the cherries, we put a thick layer of whipped cream (remember not to drop a bit for the decor).

12. The next layer - cherry syrup, it is also distributed over all the cakes.

13. Now you can collect the cake: the first layer - sand, then alternate layers of biscuit with cream and cherry.

14. We decorate the cake "Black Forest Cherry" with whipped cream, chocolate chips and whole cocktail cherries.
