Now we will tell you how to prepare a hot sauce "Skordalia". Everything is simple: potatoes are thoroughly washed, peeled and cut into small even cubes. Then pour cold water into a saucepan, put it on a strong fire and bring it to a boil. After that, we slightly salt it and throw the crushed potatoes into boiling water. Cook about 20 - 25 minutes until cooked, reducing the fire and covering the pan with a lid. Next gently pour the contents into a colander and let the potato broth completely drain. In this time, we take garlic, clean, put the denticles in a blender and grind it well. Then we put potatoes there and crush everything to a uniform thick state. Add the olive or vegetable oil to the mashed potatoes, and once again, whisk the mass in the blender. Now pour in wine vinegar or lemon juice, put salt, a mixture of ground peppers, to taste. All carefully mix, shift the finished potato sauce into a bowl, pour the remaining oil and sprinkle with freshly ground pepper.

So, before preparing the sauce, first pre-soak a piece of stale white bread in warm fashion or milk. Potatoes are carefully washed and boiled in salted water in a uniform until ready. Then carefully take it out, cool it, peel it and rub it on a melon grater. Garlic is cleaned and, together with the kernels of walnuts, grind everything with a blender or with the help of a kitchen combine in a homogeneous mass. Add the lemon juice and mix. Next, we combine in a separate clean cup grated potatoes, well-pressed bread and crushed nuts with garlic. Add salt, pepper and stir to taste. Whisk the mass with a blender until a uniform thick state is obtained, pour a little olive oil and mix everything. If the sauce is too thick, dilute it if necessary with a few spoons of cold boiled water. We serve "Skordalia with nuts", pouring on top with a small amount of vegetable oil, sprinkling with red pepper and decorating with fresh herbs.
