Beetroot on kvass

Svekolnik often called soup with the addition of beets. However, the traditional recipe for this dish has a completely different "face". It looks more like okroshka with the addition of bread cold kvass. This soup has a bright ruby ​​color, nourishes, saturates the body with energy and gives a taste of pleasure.

All the vegetables are thoroughly washed and dried. Beets and carrots are boiled in the skin until ready, cooled, cleaned and shredded straws. We cut fresh cucumbers exactly as well, and chop the green ray and mix it with salt. All the sliced ​​vegetables are piled in a bowl, poured strained vegetable broth and chilled kvass. Add spices, citric acid and sprinkle with chopped herbs. When serving on a table in each plate with beetroot we put cut boiled eggs and a spoonful of sour cream. That's all, the cold beetroot with kvass is ready!

To cook this dish we use any kind of fish. We divide it on the fillet, remove all the bones and let in the pan, pouring a little water, under the closed lid. After that, we shift the fish to a plate, cool it and cut it into small pieces. Carrots and beets are cleaned, washed and shredded with small straws.

Now we shift the vegetables to a frying pan, add a little water, vinegar to them and also extinguish to softness under the closed lid. Now we boil the eggs in chicken, cool them, clear them of shells and cut into cubes.

Fresh cucumbers washed, remove from them rough cuticles and chopped into small pieces. The loan carefully rinses all the greens - parsley, dill, green onion and dried it on a napkin, so that excess liquid is left, and then very finely chopped with a knife.

After that, take a comfortable pan, put in it all the prepared ingredients - fish, eggs, beets with carrots, cucumbers and greens. We season everything with spices, fill with cold kvass and put sour cream. Thoroughly mix everything and serve beetroot to the table!
