Cook the soup for 20-25 minutes, after which about 2 glasses of broth with vegetables are purried with a blender and returned back to the pan. Sprinkle the prepared soup with parsley and serve it to the table.

In the brazier, on warmed oil fry chopped onions for 5-6 minutes. Add the carrots and celery cubes to the onions, fry for 3-4 more minutes. We season the vegetables with salt, pepper, put peas and corn in the brazier. We give vegetables another 5 minutes, then add the sliced ​​leeks, zucchini, tomatoes, potato cubes, champignons, string beans to them, if necessary, add a little oil.

Fry the vegetables for another 7 minutes and pour the broth. Cook the soup on low heat for 30 minutes or until the vegetables are ready, then season it to taste and serve it hot. We decorate vegetable soup with cabbage broccoli fresh greens, if desired, or add croutons.
