So, before the preparation begins, we prepare all the necessary products, wash them and dry them. The duck is gutted, plucked if necessary, we process the bird under the tap and let it dry thoroughly. After that, we rub the meat from all sides with salt, ground pepper and dried herbs at will: parsley, turmeric or basil. Prunes are soaked for 15 minutes in hot water, then dried and divided into halves. From the apples we remove the core, cut into small cubes and sprinkle with freshly squeezed lemon juice. Now combine all the ingredients in one bowl, sprinkle with sugar and mix. The resulting mass of stuffing a bird, fixing the hole with toothpicks, plaster the duck with honey and spread it on a baking sheet, smeared with olive oil, back down. On the breast, we make a shallow cut with shallow incisions. After that, we peel the potatoes from the skin, wash it and divide it into 4 parts. We spread them around the bird, add everything to it, sprinkle with oil and season with spices. We send the dish for about 2 hours to a preheated oven, and we turn to the preparation of the sauce. Pour the bucket into the bucket, warm it for about 5 minutes, pour in the necessary amount of flour, mix and introduce finely chopped prunes. We cook the mixture for a while, but do not bring it to a boil. A ready-made duck with prunes and apples, carefully take out of the oven, put it on a plate with potatoes and serve along with the sauce.
