Duck stuffed with apples and prunes
Ingredients:
For the duck:
- potatoes - 1 kg;
- apples - 4 pieces;
- salt;
- duck - 1 piece;
- olive oil;
- granulated sugar - 25 g;
- lemon juice;
- prunes - 200 g;
- thyme - 1 branch;
- green olives - 10 pcs .;
- liquid honey - 15 ml.
For sauce:
- port wine - 50 ml;
- flour - 5 g;
- prunes - 7 pcs.
Preparation
So, before the preparation begins, we prepare all the necessary products, wash them and dry them. The duck is gutted, plucked if necessary, we process the bird under the tap and let it dry thoroughly. After that, we rub the meat from all sides with salt, ground pepper and dried herbs at will: parsley, turmeric or basil. Prunes are soaked for 15 minutes in hot water, then dried and divided into halves. From the apples we remove the core, cut into small cubes and sprinkle with freshly squeezed lemon juice. Now combine all the ingredients in one bowl, sprinkle with sugar and mix. The resulting mass of stuffing a bird, fixing the hole with toothpicks, plaster the duck with honey and spread it on a baking sheet, smeared with olive oil, back down.
