Zephyr Marshmelou

Today in our material we will tell in detail how to prepare an American home marshmallow marshmallow. This delicacy is largely different from the classic domestic marshmallow and to taste, and in composition and technology of preparation. Marshmallow does not contain either egg white or apple puree, but the taste is more dense and viscous.

Gourmets who know a lot about eating this sweet product recommend to add it to a cup of hot coffee, where it dissolves, forming an appetizing and tasty foam. Very tasty, too, if fry marshmallow at the stake. Thus, outside the treat is caramelized, forming a crispy crust, and inside it turns into a gentle cream.

Preparation

The process of creating chewing marshmallow marshmallow begins with the preparation of syrup. To do this, in a cauldron or thick-walled saucepan, dissolve 350 grams of sugar and citric acid in a hot water, warm it to a boil and dissolve all the crystals, stirring, and then cover the container with a lid and cook the syrup for forty-five minutes. After this, we let the mass cool down a bit, and add the baking soda dissolved in a dessert spoon, stirring.

While the syrup is being brewed, soak gelatine in a quarter of a cup of water at room temperature, and after twenty minutes warm the mass a little and mix it until it completely dissolves.

In a separate vessel, mix the remaining sugar, salt and water at room temperature, and add 160 milliliters of the prepared syrup. Warm the mass to a boil, and after this stop stirring, we subtract fire and boil the mixture for eight minutes. Now start whipping at a low speed gelatin mixture, and after a minute gradually pouring hot sugar syrup, increase the speed of the mixer and whisk the mass for at least fifteen minutes. As a result, it must become white, dense, airy and slightly viscous. We pour it into the film-covered and oiled form and set it for freezing in the refrigerator. After that, lay the frozen sheet on a flat surface, sprinkled with a mixture of powdered sugar and starch, cut into cubes or rectangles, which in turn also sprinkled with sweet starch mass.
