Storage of chicken eggs sold in stores and on food markets before sale to the consumer is regulated by GOST R 52121-2003 "Eggs for chicken. Technical conditions ». With this, everything is clear. Of course, it's best to buy labeled eggs: so there is a minimum guarantee that you will not go wrong with the shelf life and use.

Suppose you have a subsidiary farm or your own farm, there are chickens (and maybe other birds: ducks, geese, turkeys, etc.) that carry eggs, and therefore the question arises systematically where and how to store eggs.

Freshly picked eggs at home are stored in a dry and cool room. The preferred storage temperature for eggs is 0-10º, not more than 20ºC. The preferred humidity is 85%. In such conditions, the eggs are kept well for 2-3 weeks.

To eggs well preserved without a refrigerator, they can be greased with any fat (preferably pork) or vegetable oil. The smeared eggs are placed in the box with the sharp ends so that they do not touch each other. In the box can be dry sand, shavings with sawdust, salt, chaff, wood ash, peat, millet, oats. Then the box is covered, for example, with burlap. So you can save eggs for 2-3 months, of course, with low humidity.

You can store eggs in a lime mortar - so they can be kept well and more than 3 months - up to 1 year. To do this, the eggs are laid in a clay pot with a sharp end down and poured with diluted slaked lime so that the solution covers them completely with a margin in the thickness of the finger. Preferred air temperatures in the room, where eggs will be stored in the solution, 0-10 ° C. It should be noted that with this method of storage, eggs acquire a specific, not too pleasant taste, and the protein is beaten poorly. That is, this method is the least preferable.

Eggs are well preserved in a solution of table salt, a proportion of about 20 grams per liter of water.

Shelf life of eggs in the refrigerator

The shelf life of eggs in the refrigerator depends on the temperature regime, the freshness of the product and the storage location. At a temperature of 1-2 ° C, the shelf life can reach up to 3-4 months. Keep the eggs in the refrigerator better still, that is, not in the door compartments, but on the shelf in a special package (in which they are sold) or in a plastic container. We lay eggs for storage with a sharp end down. Do not wash them before storage, and if for any reason you still had to do it, then try to use the product within one month. Do not store eggs near to the smelling products, as they easily and quickly absorb foreign odors. Of course, in the refrigerator there should not be any unattractive odors.

The turkey eggs are stored as well as chicken eggs. Eggs of waterfowl can be stored in the refrigerator for no more than 1-2 weeks. But quail can safely store up to 3 months. Under no circumstances should eggs be kept in contact with meat, fish and other raw products when stored. To avoid poisoning, chicken, turkey, duck and goose eggs should be heat treated for at least 5 minutes. But quail can be used and raw. If you decide to make homemade mayonnaise, add 6% or 9% vinegar.

Boiled eggs (hard-boiled, of course) can be stored in the refrigerator for 7-10 days, and with a cracked shell - no more than 4 days. Longer storage increases the risk of infection of eggs with microbes, and hence the risk of poisoning.
