To make rice cakes easier to form, cook rice as for rolls: rinse it under running water, fill it with water, bring it to a boil on high heat. Then we reduce the fire and cook for about 12 minutes under a closed lid on a small fire. After that, we turn off the fire, but we do not open the pan with rice for another 15 minutes. Meanwhile, we prepare the fish: cut it into small cubes, pour a mixture of soy sauce with lemon juice and leave for 20 minutes to marinate. In warm rice, add the squeezed fish, add egg yolk, salt and pepper to taste, mix. If the resulting mass is liquid, add a little flour. We form the little bits, in the middle of each we put in the olive. We pour them in flour and fry in large quantities of vegetable oil on high heat until golden brown. After that, we shift the little bits on a baking sheet and at a temperature of about 180 degrees bring them to the ready. This will take about 7 minutes. In this recipe, fish can easily be replaced with chicken, too, will be very tasty.

Sweet rice balls with berry sauce

We pour them in flour or breadcrumbs and fry in vegetable oil until golden brown. We prepare the sauce: the berries (you can take any) lightly mash with a fork, pour in compote, warm slightly, then add the starch, mix and cook for about 10 minutes, stirring so it does not burn. Pour the resulting sauce with sweet rice bits and serve it to the table.
