Georgian cakes or as they are called in Georgia - mchadi, are prepared simply, you can even say primitive. A classic recipe involves the use of only corn flour and water without the addition of salt. But in practice, mistresses add a little salt and a baking powder (soda hydrated) in the test to improve the taste and give the products a splendor.

Corn flour is initially sieved, mixed with salt and baking powder, water is added and mixed thoroughly and long. Fry the maches in a dry frying pan or only a little oil it. Next, a damp corn dough is picked up with moistened hands, forming flat cakes, and spreading them on a dry frying pan. Even tastier and more useful will turn out flat cakes on kefir in the oven. For their preparation, mix sifted corn flour with egg and yogurt, adding a stone and baking powder in the process. Depending on the properties of corn flour, it may need a little more or less, but the dough should turn out to be a damp and dense consistency, so that cakes can be made from it. To do this, divide it into six portions and put each on a silicone mat or parchment oiled on a baking sheet. We give the products a flat shape, grease with olive oil from above, sprinkle with sesame seeds and poppy seeds and put in an oven heated up to 185 degrees for twenty minutes.
