The secret of cooking this kind of cottage cheese is that the main binding substance in the recipe is not a mixture of eggs and flour, but a mixture of whipped eggs with sugar and salt. A dense, airy and sticky mass will easily retain the moisture of low-fat cottage cheese (about 9%) and thus our delicacy will not decay during frying.

So, we divide eggs at room temperature into yolks and proteins. To the yolks, add a pinch of salt and whisk until soft peaks form, after which, without stopping whipping, pour sugar to the eggs (1-2 tablespoons will be enough) and continue whisking for another 5 minutes. Now curd the cottage cheese through a sieve and mix with yolks. The resulting curd mass is carefully combined with whipped proteins. Add vanilla sugar. Ready-made dough for cheese cakes should have the consistency of sour cream.

In a frying pan, we warm up the vegetable oil and fry the cheese cakes on it. Prepared syrniki without flour and manga spread on a paper towel to absorb excess oil.

Delicate curd cheeses can be cooked completely without eggs! And even without flour! In this recipe we replace flour with semolina, the amount of which will be regulated by the density of the cottage cheese itself.

Cottage cheese is wiped through a sieve and mixed with semolina. Add sugar and salt to the curd and salt it with a crush. The finished mass should not stick to your hands. Now the curd base is rolled into a thick sausage and cut into circles.

Each such circle is the future cheese cake. This is done so that all the syrniki come out the same size. At this stage, cheese cakes are better to slightly roll in flour, so that they do not stick to the frying pan during frying, but if flour is not used in principle - replace it with starch, or the same manga.

In a frying pan, we heat the oil and fry the syrup on both sides until golden brown. You can serve ruddy syrnichki with sour cream, or berry jam.

Cottage cheese is wiped through a sieve, or whisked with a blender into a homogeneous mass. Depending on the fat content of cottage cheese, add to it 1 or 2 eggs and 1 or 2 tablespoons of semolina. All carefully mix and add vanilla essence and a pinch of salt. To make the syrniki sweeter, you can add to the curd weight pre-soaked raisins, or any other dried fruits for your taste.

Now take the forms for cupcakes and oil them with vegetable oil. Each such form is half filled with cheese mass and put in an oven heated to 170 degrees. Cheesecakes will be ready after 20-25 minutes, after which they should be slightly cooled before they are taken out of the mold, otherwise the syrniki will fall apart.

Finished delicacy sprinkled with powdered sugar, or served with honey, jam, or sour cream.
