If you love homemade cakes, in particular pies, and are not indifferent to the exotic taste of coconut, then the recipes of coconut cake will be very helpful.
Pie with coconut chips
Ingredients:
- kefir or sour milk - 1 item;
- wheat flour - 1,5 items;
- egg - 2 pieces;
- sugar - ¾ item;
- baking powder - 1 sachet;
- coconut shaving - 80 g;
- Vanillin - on the tip of the knife;
- cream fat content of 20% - 1 tbsp.
Preparation
Mix the eggs and half a cup of sugar with a mixer or whisk. Add kefir to them and stir again. Sift the flour, add baking powder and pour it all together into the liquid mixture. Mix again thoroughly so that there are no lumps.
Form the baking grease, pour the dough into it. For the filling of the pie, mix the remaining sugar with the coconut shavings and add vanillin to them. Put the resulting mixture on the dough and send it all to the oven, heated to 180 degrees, for 25-30 minutes.
Make sure that the shavings are not burnt, if it turns rosy before the dough is baked, cover the pie with foil. Ready to get a coconut pie and, while it's still hot, pour the cream. Serve to the table cooled down.
Apple-coconut cake
Ingredients:
- oil - 200 g;
- sugar - 200 g;
- eggs - 3-4 pieces;
- lemon juice - 3-4 st. spoons;
- flour - 200 g;
- coconut chips - 75 g;
- soda - 0,5 tsp.
- apples (sour) - 800 g.
Preparation
Mix the butter, eggs, sugar, lemon juice and rub well. Flour move with soda and 50 g of coconut chips, add to the mixture of butter and eggs. One apple grate, sprinkle with lemon juice and send to the egg-flour mix. Knead the dough. Lubricate the form with oil, sprinkle with breadcrumbs and pour the dough into it. Apples peel and core, cut into slices and place on dough. Bake the cake for about 50 minutes, and 10 minutes before the end sprinkle with the remains of coconut shavings.
