Cold smoked halibut

To begin with we choose a carcass of fish, it should be fatter and thicker. In principle, it does not matter whether the fish is fresh or frozen. Then weigh it and for each kilogram of fish prepare a mixture of 20 grams of large salt and 5 grams of sugar. With this mixture we rub the fish, we put it in a bowl or on a plate we sprinkle with lemon juice and, covering it with a plastic bag, we send it to the refrigerator for 2-3 days. During this time, periodically turn the fish from side to side. When the time is up, make a decoction of onion husk: for 0.5 liters of water we put the husks in the shelter, warm it up and let it cool down. My fish, dry it, put it in a broth for 30-60 minutes, periodically turning over.

Then we take out the fish, we again dry it, and with the help of a culinary brush, we spread it on all sides with liquid smoke (it is sold in stores). We hang the halibut by the tail (in a cool room) for one day, do not forget to put a plate under it where the fat will drip. After a day you will get halibut cold smoked, which can be stored in the refrigerator for no longer than 5 days.
