Compote of zucchini for the winter

Zucchini - a very useful fruit, it is easily absorbed by the human body. The regular inclusion of zucchini in food has a very beneficial effect on the digestive and immune systems, as well as on the condition of the skin and joints. The zucchini composition includes carotene, B vitamins, pectins, magnesium, potassium, calcium and iron compounds, vegetable fiber.

The general idea and principle of preparation of any compote is clear: it is necessary to boil (or rather - to soak) the basic ingredients in the right amount of water or slightly concentrated sugar syrup . Since zucchini does not have pronounced flavor characteristics, it is better to combine them in compotes with sweet and sour fruit. This combination will create a special taste harmony. Compotes from courgettes can be preserved for the winter, or cook for direct consumption.

Zucchini thoroughly washed in cold water. Lemons and oranges before washing in cold water should be given by boiling water. We cut off all the tips from both sides on both sides. Zucchini cut in half along and further - thin slices, or cubes-brusochkami (cuticle is not cut, it has a lot of useful substances). Also slices sliced ​​orange and lemon, be sure to remove pits, and then compote will be unpleasantly bitter. We lay a sliced ​​zucchini and citrus slices in clean sterilized glass jars (it is advisable to use a can of no more than 2 liters).

From the water and sugar, cook the syrup of the desired concentration (for example, 3 liters of water - 2-3 tablespoons of sugar).

Fill zucchini and citrus in the jars with boiling syrup, close the lids and leave for 15-20 minutes, then merge the syrup into a saucepan. We bring the liquid to a boil again, boil the minutes 3, again pour into the jars. Rolled sterilized in boiling water covers, turn over and cover until completely cooled.

If you are not going to roll the compote, then it will be ready for use after the zucchini and citrus slices in a saucepan were poured with boiling water until natural cooling (at least for 40 minutes let it feed). Brew compote with citrus fruits is not necessary, the entire vitamin C is destroyed. In general, a portion of compote from zucchini for one-time use (for example, a family) is best prepared in a large thermos - the maximum of vitamins will remain.

In the same way, approximately following the same recipe (see above), it is possible to prepare pineapple compote from zucchini, for this you can use the remains of fresh pineapple remaining after the dressing. This method allows you to economically use non-expensive exotic fruits.

Of course, we can boil compotes, combining zucchini not only with exotic, but also with more familiar fruits growing in our latitudes. For example, compote from zucchini with apples and / or plum. Apples are better to choose sour or sweet and sour. If the natural acid in the fruit is not enough, you can add citric acid in the amount of 1-1.5 g per 1 liter of water to the preserved compote. It is better to use natural sour fruits, by the way, sugar in compote for winter is also not necessary. Just all the fruit for compote should be washed well, remove the apples from the apples, seeds, seed boxes and cut into slices. Pour boiling water necessarily twice. Such a healthy compote without sugar with natural sweetness can easily be consumed even by those to whom sugar is contraindicated.
