It's nice to have tea with fragrant jam in winter, especially if a sweet treat is an unusual jam from walnuts. Nut jam is very useful: it has the property of preventing the occurrence of sclerotic changes in the vessels. In addition, the beneficial properties of walnuts for humans consist in the fact that it contains trace elements - copper, magnesium, zinc, cobalt. Selection of fruits

We start with the selection of fruits for jam. Nuts need to choose immature - green, the shell inside the nut should be tender, as if waxy. Check how suitable they are for jam very simply: take a toothpick and try to pierce the nut, if the sharp stick comes in without problems, then this is what we need. Such ripeness nuts are, usually, at the end of June. In addition, nuts should be without any flaws, be it specks, dents, etc.

Preparation of fruits

Although, as already noted, the recipe for walnut jam is quite simple, however, you need to be patient.

We start by cleaning walnuts from the upper peel. Thoroughly peeled nuts are immersed in cold water, we keep fruit in water for at least two days. 3 times a day merge water, picking up a new one. Thus, we get rid of bitterness. After a lapse of two days, drain the water, pour the nuts with lime water (mix lime with water). We keep 4 hours in lime water. We wash off under running water with special care. Again pour cold water and stand for another two days.

How to cook walnut jam?

Nuts pierced with a needle and run them into boiling water (the water should completely cover the fruit). Cook should be 10 - 15 minutes, after which we spread the nuts on a sieve. Cook from a solution of sugar in water syrup. In sugar syrup we lower the nuts, squeezed juice from the lemon, selected spices. Bring to a boil, turn off the stove. After cooling the mass, boil it again. The process is repeated three times. The resulting jam is spread over prepared sterilized jars.

Keep the jam from walnuts in a cool place.

The resulting delicacy is useful to use as a preventative against colds and beriberi, especially on rainy days off-season.

Important: Doctors do not recommend eating jam from walnuts to people with diabetes. Also, with caution to the use of delicacies should be treated with a peptic ulcer disease of the duodenum and people suffering from a stomach ulcer.
